Size, Order, Color and Shape, All Set in One Place
The icons in your email signature are the part people actually click, so they get their own set of controls rather than being whatever the layout decided. Five things are yours to set.
The five controls
Size. Three sizes, labeled SM, MD and LG. What you see in the chooser is the size you get, drawn large enough in the picker that you can actually judge it. Sixteen pixels is too small to make a decision from.
Order. The order in the chooser is the order in the signature. Put the platform you most want clicked first, which for most actors is not the one they post to most.
Color. A monochrome icon set takes your accent color, in the signature and in the chooser, from one setting so the two cannot disagree about what your color is.
This is switched on per icon set rather than guessed at, and the reason is a neat illustration of why guessing is a bad idea. One set is a solid black tile with a white mark on it. Tinting that one paints the tile and the mark the same shade and leaves a solid blob. So each set declares whether it can be recolored.
Shape. The corner rounding is shown as three sample shapes that differ only in how round their corners are. That difference is the whole control, so showing it beats labeling it.

Which links go out
Two switches govern each platform on your Links page: active, and featured. Both have to be on for a link to appear publicly.
Your website has always followed that rule, and your signature follows the same one, so the two agree. A platform you deliberately took off your own site does not quietly go out on every email you send.
Both switches default to on, so this only ever hides something you chose to hide. If you want a platform in your signature but not on your site, or the other way round, the switches are per-row.
One small thing that saves an irritation
Every export starts with two blank lines above the signature. That means when you paste it into a draft, your cursor lands above it rather than below, and you type your message where a message goes.
It is decided in one place, so the copy buttons, the source listing and the browser extension all behave identically. The preview does not add them, because it is showing you a signature rather than a draft.
